The only product that is extracted and commercialized is Patagonian Toothfish (Dissostichus eleginoides), which is a white-fleshed and firm fish, rich in Omega 3, and a demersal species found in the cold waters of the southern oceans at depths of up to approximately 2,000 to 3,000 m.

Patagonian Toothfish

It corresponds to a zoological species of Hake belonging to the Nototheniidae family. In South America, it is also known as Mero, and internationally as Chilean Seabass (Patagonian Toothfish). It has a dark grey color and is known for its longevity, living up to 50 years.

It commonly exceeds one meter in length, with captures of individuals up to 2.5 meters.

Its approximate weight can range between 25 kilograms and 100 kilograms. It feeds mainly on squids and other fish species, and its delicious flavor and texture make it one of the preferred fish by international chefs.
